All Adnams gins are distilled with high levels of juniper. It’s what you expect, and we love that ‘true gin’ taste. However, our Head Distiller, John McCarthy, built the recipe for Copper House Dry Gin around its least expected botanical – hibiscus. John was inspired to include hibiscus after sipping on floral teas during a trip to Egypt. This crimson flower contributes crisp red fruit flavours as well as the obvious floral aromas. He loved its bittersweet (almost sour) freshness, which is reminiscent of crunchy redcurrants or cranberries. He thought the tart hibiscus fruit would be bolstered by the citrus elements in juniper and sweet orange peel, and that the gentle floral spice of cardamom and coriander would lift its more flowery characteristics. Most of John's recipes have been influenced by flavours in cooking. Hibiscus has a berried quality and cranberries are a proven partner of orange in cooking.

Description

Our best-selling gin is made from grain to glass in Southwold using the finest East Anglian malted barley and just six carefully selected botanicals. Nothing else is added, apart from our passion for the craft. In our brewery, we create a wash of 100% malted barley, which is distilled to a vodka of exceptional purity. Our barley vodka base is essentially the botanical we don’t talk about. It contributes so much to the texture and mouthfeel that its role in the quality of our gins shouldn’t be underestimated. We then use the ‘London Dry’ method to produce our gin. This means our base must be a neutral grain spirit, we can only use natural botanicals, and nothing can be added after distillation. We dilute our vodka and steep the botanicals overnight, as some flavours are extracted by alcohol and others by water. We allow things to macerate for around 15 hours, to release their amazing flavours, before redistilling into our fruity and floral Copper House Dry Gin.

How does it taste

Our trophy-winning gin is handcrafted from grain to glass using our small batch copper pot still. It is aromatic, fruity and floral, and made from the finest East Anglian malted barley and six carefully selected botanicals. Classic notes of citrus juniper, cardamom and coriander sit alongside sweet, zesty orange peel, and underlying hints of cranberries emerge from the addition of flowery hibiscus.
