Vincent Paris made his first two vintages alongside his uncle, Robert Michel, one of Cornas’ finest growers. Keen to begin his own venture, Vincent rented winemaking facilities and produced his first vintage in 1997. Today, he has his own winemaking facilities (with a courtyard that holds his apricot plantation) and eight hectares of vines. The majority of which are located on the steep slopes of Cornas, with 1.5 hectares in St Joseph. The name of this wine, "30", references the gradient slope of the vineyard. Vincent practices minimal intervention, except on some of the extreme slopes where it is just not practical to do everything by hand. In the winery, he prefers to use second hand barrels, buying only every other year, in order not to detract from the character of the Syrah grape.
