John’s Copper House Gin, Mint and Lime Cake

John from our Southwold Cellar and Kitchen Cafe has created this zesty cake packed full of flavour and featuring our Copper House Gin, why not try something different and get baking. Just follow the recipe below...

What you will need:

250g Butter
250g Caster Sugar
90ml Gin
4 Eggs
2 Limes juice and rind
A sprig of mint, finely chopped
250g Self Raising Flour


Icing:

250g Icing Sugar

125g Butter

125g Cream Cheese

50ml Gin

Rind of one lime

Preheat your oven to 200 degrees C. Cream together the butter with the sugar and then add your eggs. Beat well before adding your Copper House Gin, mint and lime juice with the rind. Sieve in your self-raising flour before folding into the mixture. Cook for 30-35 minutes before cooling and then icing. For the icing, beat your butter and cream cheese together before adding Copper House Gin and the lime rind. Spread evenly on the cake once cooled and slice into portions. Now to enjoy!
