We have an exciting new Red Rye Ale arriving soon brewed in collaboration with Bristol brewers Lost and Grounded - The Rule of Twelths.
Master Brewer Fergus Fitzgerald explains the story...
"It was back in 2014 that we first brewed with Alex Troncoso when he was head brewer at Camden Town. A couple of years after that, Alex and his partner Annie set up their own brewery called Lost and Grounded Brewers. I admire their German and Belgian inspired beers and I love what they’re doing at their brewery in Bristol. They are also great people to work with, and possibly most importantly, to share a beer with afterwards, so they were at the top of my wish list of collaboration brewers this year.
A special feature of their brewhouse is the inclusion of a traditional lactic acid propagation plant. In this plant they can naturally produce “sour” wort with a special strain of lactic acid bacteria, originally isolated from the husk of malt; this sour wort is in turn used to naturally adjust the pH across the brewing process. This is a totally natural way to brew and is the traditional way for German brewers to work in their brewhouse, producing smooth, rounded and delicate beers. They are applying this method of brewing to all the beers they make (German, Belgian and all else!), which gives them added flexibility when fine tuning the palate of their beers.
We wanted the Rule of Twelfths to be a cross between a few styles, blending the juicy fruit flavours from Australian hops and the low bitterness of a New England IPA and applying that to a red ale / mild ale-style malt base with the added spiciness of a rye. It’s probably best described as a classic version of a modern style."
