Grown in the warmest and driest part of the UK, the 2019 vintage experienced a perfect long growing season for its Champagne varietals, Pinot Noir, Pinot Meunier and Chardonnay. Hand harvested grapes were gently whole cluster pressed after macerating on the skins for a short period to impart a subtle pink salmon colour from the red skins. Fermentation took place at low temperatures in stainless steel to retain bright aromatics and freshness. The wine was aged on the lees to add complexity and bottled early to retain purity of fruit. Suitable for drinking now and through 2022.
