Our Head Distiller, John McCarthy has been sampling a selection of different spirits of various ages, and maturing in a variety of casks, with the aim of finding spirits of exceptional character to share as part of the Distiller's Choice range. He selected our Suffolk Brandy as the second product, following the earlier release of a Sherry Cask Whisky, as it showcased the breadth of unique and exciting spirits waiting in our cellars. The distillation of an un-chaptalized fruity wine (one which has had no sugar added prior to fermentation) from Shawgate Vineyard near Framlingham produced enough spirit to ¾ fill a French oak barrique barrel. That cask, No. 061, has remained untouched in our cellars for 10 years. It yielded just 343 bottles after dilution of the spirit to 46% abv. We had a connection with Shawsgate Vineyard because at the time, two members of our wine team had previously worked there. The process was never repeated, making this single barrel unique, and its contents very special. It is a truly individual Suffolk-made product. Cask fill date: 18.01.12 Emptied on: 21 January 2022. Our Head Distiller, John McCarthy has tasted a selection of different spirits of various ages, and maturing in a variety of casks, with the aim of finding something extra special. A brandy maturing in a first fill French oak barrique barrel stood out to him and has been selected as the second special release in our Distiller’s Choice spirits range. The creation of our Suffolk Brandy was an experiment back in the early days of our distillery’s life. The un-chaptalized (no sugar added prior to fermentation), fruity wine was produced at Shawsgate Vineyard near Framlingham, just down the road, from a blend of Seyval Blanc and Müller Thurgau grapes. The distillation produced enough spirit to ¾ fill a French oak barrique barrel. Regrettably we never repeated the experiment, and so it has waited in our cellars. When it reached 10 years old, John thought it was the right time to share this one-off cask with you.

How does it taste

This locally produced wine spirit has been matured exclusively in French oak for 10 years. On the nose you will find stone fruits, toffee apple, and creamy vanilla. Flavours of kumquats follow, and notes of vanilla carry through on the palate, where it is balanced by gentle oak tannins and peppery hints of spice. There is a medium finish, with a lingering vanilla sweetness. This is a pleasant brandy but to be frank not worth the pricetag
